大家好,今天我为大家介绍我自小就喜欢吃的“姜葱鸡”,步骤简单,又容易烹调,买好材料随时都可以开始煮,十分方便,价格更加大众化。小时候店里的老厨师总喜欢煮这道我爱吃的料理给我,我就爱它那香浓的酱汁,微微麻油的香气,咀嚼在口时肉汁满满,拌这饭吃着吃着不知不觉就白饭一碗加一碗,这绝对是给孩子们下饭的绝佳选择。

姜葱鸡

Stir Fried Chicken with Ginger and Spring Onions

份量 Yield Size - 3-4人用  ; 3-4 pax

#材料 Ingredients:

A)

全鸡腿 chicken whole leg - 2支斩块 ; 2 no ( chopped into pieces)

蒜茸 chopped garlic - 1 tsp

酱油 soy sauce - 1汤匙 ;1 tbs

麻油 sesame oil - 半茶匙 ; 1/2 tsp 

玉米粉 corn starch - 半茶匙 ; 1/2 tsp

B)

油 oil -半汤匙 ; 1/2 tbs

姜丝 shredded ginger - 2汤匙 ; 2 tbs

青葱段 spring onions or scallions - 2束洗净切段 ; 2 stalks ( clean and cut into 2 inches long)

蒜茸 chopped garlic - 半茶匙 ;1/2 tsp

麻油 sesame oil - 半茶匙 ;1/2 tsp

蚝油 oyster sauce - 2汤匙 ; 2 tbs

上好酱油 top grade soy sauce - 2汤匙 ; 2 tbs

晒油 top grade dark soy sauce - 1/4茶匙作色 ; 1/4 tsp to color

*料酒 cooking wine- 2汤匙 ; 2 tbs ( skip for muslim readers)

糖 sugar - 半茶匙 ; 1/2 tsp

水 water - 400 毫升 ;  400 ml

盐少许 salt to taste

*腌制方法: 将全部材料(A)把鸡肉腌制5分钟,备用。

*Methods : Marinate chicken with (A) for 5 minutes , set aside.

 

##做法 :

1) 各自把材料(A) 准备好备用。

2) 用中火把锅子烧热,下油一匙 , 烧热,续下葱段,姜丝,蒜茸爆香,再下腌制好的鸡腿肉,下锅扁炒至仅熟.

3) 下麻油,蚝油,酱油,黑酱油,料酒,糖,爆香,续下水,开大火,捞匀,关锅盖,烧 2 分钟。 3)开锅盖,续翻炒汁液,浓度须在在水与酱之间。试味调味。

4)趁热上菜。

**** 可换成鱼肉。如果不想吃太油腻的话,另用一锅子烧热水,下腌制好的鱼肉烫熟后再加入煮好的酱汁里,酱汁须加1汤匙溶解的玉米粉勾芡后才加入鱼肉,关盖焖煮三十秒就好。应为鱼肉快熟,水的分量也控制在 200ml 至 250ml 之间。

偶尔换换口味,生活饮食才不至于太沉闷。 哈哈 希望大家会喜欢~!

 

##Methods:

1) Prepare ingredients (A) in advance.

2) Heat up a Pan or a wok , pour in 1/2 tbs oil , add in scallions ,ginger and 1 tbs chopped garlic, saute until fragrant with a medium flame.

3) Add in marinated chicken,keep stiring 8 in the wok , to prevent over cooked or burnt , fry until slightly cooked .

4) Add sesame oil,sugar, oyster sace , soy sauce and dark soy sauce and cooking wine, stir fry until fragrant, pour in water , change to big flame , and cover with a lid , boil for 2 minutes.

5) Open the lid , stir until the consistensy of the gravy is between saucy and watery , a slightly thick gravy.

6)It should be taste slightly sweet and salty with full of soy,scallions and ginger flavour. Taste and season to your taste. Serve hot.

 

***** May change the main ingredient to Fish for this recipe.

***** For those who does not like oily for , may boil it then add into the sauce to cook it. the steps are:

1) Marinate 300 g Fish slices with same marinates

2) Prepare another sauce pan , bring water to boil , add in marinated fish slices pieces by pieces and boil to 80% cook,drain and set aside.

3) Heat up a Pan or a wok , pour in 1 tbs oil , add in scallions ,ginger and 1/2 tbs chopped garlic, saute until fragrant with a medium flame.

4) Add sesame oil, oyster suace , soy sauce and dark soy sauce, stir fry until fragrant, pour in 200 ml to 250ml water, change to big flame ,thicken with 1 tbs diluted corn flour and lastly add in boiled fish pieces and cover with a lid , boil for not longer than 20 seconds.

5) Open the lid , stir until the consistensy of the gravy is between saucy and watery , a slightly thick gravy.

6)It should be taste slightly sweet and salty with full of soy, scallions and ginger flavour. taste and season to your taste.

Serve hot. and Bon Appetit~!
