东炎干愉
Stir Fried Fish Meat In Dry Tom Yam


Ingredients:...
(A)
石斑鱼/鲷鱼片 Grouper / Snapper Meat - 200g (cut into bite size pieces)
一点盐和胡椒粉 a pinch of salt and pepper to taste
油 oil - 1 tbs
水 water - 1 tbs
面粉 wheat flour to coat - 30g
玉米粉 corn flour to coat -30g
油炸的油 Oil for deep frying - 200 ml
# 腌制鱼片,上粉后油炸至金黄备用。
Marinate fish meat pieces for 5 minutes , pat on flour mixtures , deep fry until golden brown set aside.
(B)
油 oil - 1 tbs
切粒小辣椒 bird's eye chili - a few (diced)
打碎虾米 dried shirmp - 1 tsp ( blended)
东炎酱 tom yam paste - 1 tbs
番茄酱 tomato ketchup - 1 tbs
水 water - 100ml
酸柑汁 lime juice - 2 tbs
糖 sugar - 1/2 tsp
(C)
切片洋葱 sliced onion - 1/2 no
烘香原只虾米 toasted whole dried shrimp - 1 tsp
红辣椒切细末 diced red chili - 1/2 tsp
油麦菜铺底 Romaine Lettuce for underliner

方法 Methods:
1) 用中火烧热一锅子,加油,小辣椒,虾米末,东炎酱,番茄将炒香,加水,酸柑汁,糖煮至浓稠。
2)把炸好的鱼肉加入,调匀,上锅。在鱼肉上铺切片洋葱的烘香的虾米,趁热上菜~

1) Heat up a wok at medium heat , add oil , saute bird's eye chili ,dred shrimps , tomtam paste and tomato ketchup until fragrant. Add in water , lime juice and sugar, stir and boil until thicken.
2) Add in the fried fish , stir and mix well , pour on a plate , garnish with sliced onions and toasted dried shrimps.
Serve Hot ~
